In its simplest and oldest form, food processing involves changing the basic structure of food from its natural form. Before processing, food had a short shelf life and was prone to foodborne bacteria, leading to illness.
It wasn’t until refrigeration took centre stage that food transportation became a viable trade.
Before the refrigerator as well as food processing equipment, icehouses were used to store goods. However, these spaces were not portable and as such, limited by mobility, safe transportation of perishable foods proved difficult.
After several designs and attempts by a variety of people, Scottish-Australian journalist James Harrison built and patented the first refrigeration system in the 1850s.
Whether it’s across the state, country, or globe, refrigeration (plus developments in transport) opened up an entirely new market for perishable food production, distribution, and importantly, sales!
In another leap in food transport, food processing resulted in product that not only boasts a longer shelf life (thus making food transportation even more achievable), but that is also less susceptible to spoiling and bacterial infiltration.
After refrigeration, the market also developed “shelf stable” product, that is, product that does not require refrigeration during transport or when stocked for selling.
This resulted in big savings on food transport costs!
Shelf stable products can be safely stored at room temperature in a sealed packet or container, rather than in the refrigerator. For example, Kraft’s “blue packet” cheese has always been stocked on the shelf, not the refrigerator, in Australia.
During processing, product is treated by heat or dried out to destroy microorganisms that can cause food to spoil or lead to illness. During packaging, product is stored in a sterile and airtight container.
The Australian company, based in the NSW town of Bega (population 4668), exports its dairy products all over the world, and in particular the Middle East, where strong demand has fuelled from rapid population growth.
Kerry Foods manufactures a number of products including kids’ snack Cheestrings and Dairygold butter spread as well as industry products such as cheese slices for burger chains. Kerry Foods was named Ireland’s biggest food and drink exporter in 2013.
